Quinoa, Edamame and Summer Radish Salad

I found a version of this recipe in the July issue of one my favorite magazines, Real Simple. But in the haste of getting ready for school, I left out the raw beets and replaced the homemade dressing with Goddess Dressing from Trader Joe's, which also uses tahini as its base. A hearty late-summer dinner salad that is very quick to assemble -- enjoy!

Ingredients:
Red quinoa
Edamame (I get the frozen kind from Trader Joe's)
Summer Radish
Arugula
Goddess Dressing, or Tahini Sauce featured in the above link

There is very little to say about about how to "make" this salad, as it requires very little cooking. Assemble the ingredients warm or cold, for dinner, lunch, or an appetizer. Perhaps try the beets if you have more time, but the salad totally holds up without them.
