My friend Robyn sent me this recipe, saying it was the best way she had ever eaten butternut squash. She was right! Here is the link:

You'll see that I used swiss chard and kale in place of the spinach; I also needed to add a bit more curry paste. Serve with brown rice on a cold winter night!
