Although I love making muffins, I wanted something savory to pair with the quiche, and this is just what came along! It's a melange of recipes that Google found for me : ) I don't have a biscuit cutter, so they look a little funny... but they sure are good out of the oven! Yum!
Ingredients:
1 cup all purpose flour
3 teaspoons baking powder
2 teaspoons white sugar
1 teaspoon salt
2 tablespoons unsalted butter, chilled and chopped into small pieces
3/4 cup mashed sweet potato, fresh or canned
1/4 cup of milk
a bit of cinnamon
a dash of allspice
a sprinkling of packed brown sugar : )
Mix all the small pieces of butter with the dry ingredients and stir until you have an evenly crumbly mix. Then, add the sweet potatoes, milk, and spices. Stir gently into a dough, and drop spoon-sized balls onto a greased baking sheet. Bake at 400 degrees for about 20 minutes.
