Pumpkin Spice Bread

Autumn was in the air this weekend! I used canned pumpkins in this loaf with the hope that a larger harvest of pumpkins arrive at the farmer's markets -- but at least I've found a good recipe! Adapted from epicurious.com.

Ingredients:

3 cups flour (two white, one wheat)
2 cups sugar (one white, one brown)
1 cup vegetable oil (or split this with 1/2 cup apple sacue)
3 large eggs
1 16-ounce can solid pack pumpkin
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup coarsely chopped walnuts
chocolate chips!!!

Mix all ingredients, wet into dry. Pour batter in a buttered and floured bread pan, and bake for an hour at 350 degrees.
